Chocolate Guinness Bundt Cake Recipe
• 1 3/4 c all-purpose flour
• 2 c sugar
• 3/4 c Dutch-processed cocoa powder
• 2 tsp baking soda
• 1 tsp baking powder
• 1/2 tsp salt
• 1 c full-fat buttermilk
• 1 c Guinness (dark beer)
• 1/2 c vegetable oil
• 2 large eggs
• 1 tsp vanilla extract
Preheat oven to 350˚F. Spray a standard bundt pan with cooking spray and set pan aside. Whisk together the flour, sugar, cocoa powder, baking soda, baking powder and salt. With a hand mixer or stand mixer, mix the buttermilk, Guinness, oil, eggs and vanilla on low setting. Add the flour mixture and beat until combined, then beat the cake batter for 4 minutes on medium speed. Pour the batter into the prepared bundt pan. Bake for 45-50 minutes, or until cake tester comes out clean and the top of the cake springs back when lightly touched with a finger. Cool the cake in the pan for about 15 minutes, then invert the cake onto a cake pan or plate.
Glaze: Mix together 1 1/2 cups powdered sugar, 1/4 cup melted chocolate chips and 1 tablespoon Guinness. Drizzle on warm cake.
